Because of overwhelming demand, we've taken extreme efforts to hand sort our wood selecting the very finest grain staves for this barrel. We've found our extra-fine grain barrel to be extemely popular amongst winemakers looking for softer, more elegant oak flavors that will both showcase their fruit and add structure and texture to their wines. It's easy to identify the extra-fine grain staves' abundance of earlywood cells, but what's most important are the chemical properties. During seasoning and toasting, harsh tannins are removed leaving the softer tannins for wine maturation. Furthermore, in maturation, cask driven oxidation is enhanced, while a spectrum of volatile acids estrify in the presence of wine thereby increasing fruit character.
